Prawn Pulao is easy to make but delicious. This Pulao is a one pot dish in which the spices are tempered first and then the veggies, prawns and rice are cooked together. You can serve it with any raita and with a fried pappad on the side.
1 cup Basmati Rice
250 gram prawns
2 onions chopped
1 tomato chopped
1 tsp cumin seed
1 bay leaves
2 inch cinnamon stick
1 tbsp ginger and garlic paste
½ tsp turmeric powder
1 tsp chilli powder
Salt to taste
1 ½ cup water
2 tbsp ghee
½ cup coconut milk
2 tbsp grated coconut
2 tbsp chopped coriander leaves
Wash and soak the Rice for 20 minutes.
Heat a pan and add 2 tbsp Ghee.
Add cumin seeds. When it splutters add bayleaves, cinnamon, peppercorns , cloves and sauté for a minute.
Add onion and mix well. Add salt and ginger garlic paste and sauté till onion turns golden.
Now add the tomatoes and sauté for a minute.
Now add chilli powder, turmeric powder and mix well.
Add the prawns and the soaked rice and mix well. Add 1 ½ cup water and ½ cup coconut milk.
Cook on high flame until the water on the surface dries up.
Now cover and cook for 10 minutes on low flame or till the prawns and rice are completely done.
Garnish with chopped coriander leaves and with grated coconut.
Serve it with Raita and Pappad.
