Paneer Tikka Pizza is a pizza popular in India and overseas. This is a fusion recipe. While the pizza and pizza sauce are Italian the paneer tikka is Indian.
2 cup maida/plain flour
1 tsp yeast
1 tsp sugar
2 tsp olive oil
½ tsp salt
½ cup warm water
For Paneer Tikka
½ cup thick yogurt
15 cubes paneer
½ capsicum red and green sliced
½ onion petels
1 tsp kashmiri chilli powder
¼ tsp turmeric powder
½ tsp coriander powder
¼ tsp cumin powder
¼ tsp garam masala
½ tsp ginger garlic paste
1tsp lemon juice
½ tsp salt
½ tsp kasuri methi
1 tsp olive oil
3 tbsp pizza sauce
¼ tsp chilli flakes
¼ tsp mixed herbs
½ cup grated mozzarella cheese
In a large mixing bowl add ½ cup warm water, 1tsp sugar, and 1tsp yeast. Allow the yeast to activate.
Add 2 cups of maida, 2 tbsp olive oil and ½ tsp salt to a bowl.
Now add the activated yeast and mix well. Knead to a soft dough by adding required water.
Grease a bowl and place the dough in it and cover it with a lid or with a cling wrap.
Let it rest for about 2 hours.
In a mixing bowl take ½ cup yogurt. Add chilli powder, Turmeric powder, coriander powder, cumin powder, garam masala, ginger garlic paste, lemon juice, kasuri methi and salt.
Combine well with a whisk. Now add capsicum, onion and paneer cubes to it and mix well.
Cover and refrigerate for 2 hours.
After 2 hours punch the raised dough with fist to release down the air.
Divide the dough into 2 balls and tuck them.
Place the dough on a greased tray and flatten the dough by stretching with both hands.
Leave a centimeter and create a dent,. This helps the crust to fluff slightly and prick the centre of dough with the help of a fork to prevent the pizza from fluffing up.
Spread the pizza sauce generously leaving the sides slightly and spread uniformly marinated paneer tikka.
Place some olives and sprinkle chilli flakes and mixed herbs.
Then spread ½ cup of grated mozzarella cheese over the base.
Brush olive oil over the sides of pizza crust to make pizza crust more crispy and golden brown.
Bake in a preheated oven at 450 degree Fahrenheit or 200 celsius for 20 minutes.
