Coffee Bean Cookies

Post No.203

A perfect recipe to share with my coffee-craving, cookie-loving friends.

1/3 cup butter

5 tbsp powdered sugar

1 egg yolk

1 cup flour

1 ½ tbsp cocoa powder

½ tbsp coffee powder

1tbsp warm water

Add hot water to the coffee powder and stir in to dissolve.

Cream together the butter and sugar with a whisk till creamy.

Add egg yolk and whisk again.

Add the coffee mixture and whisk well.

Mix the flour and cocoa powder well .  Add to the above gently and fold in with a spatula little by little until you get a smooth dough.

Take half teaspoon of the dough and shape it in to a oval shape and place them on a tray lined with parchment paper ½  an inch apart.

Use the back of a knife or a tooth pick to press a middle line on each  dough so that they resemble a coffee bean.

Now bake this in a preheated oven at 340 F/170 c for 10-12 minutes.

Transfer the cookies to a wire rack to cool completely.
