Carrot Laddu

Carrot Laddu is a very healthy and delicious sweet dish.  Carrot laddu recipe is  very easy to make recipe for the coming diwali. This laddu recipe is packed with the goodness of carrot and coconut along with raisins. This laddu stays fresh for 1 week in the refrigerator and 2 days at normal temperature.

Ingredients

2 cups grated carrots

1 cup grated coconut

¾ cup sugar

2 tbsp ghee

½ tsp cardamom powder

¼ cup raisins

Method

Heat ghee in a pan and fry the raisins and keep aside

Add the grated carrot and sauté  for 10 minutes  in low flame or until the raw smell leaves.

Now add coconut, sugar and cardamom powder and keep cooking until it forms a thick mixture.

Add the raisins and mix well. Switch of the flame and let it cool for a while.

Grease your palms and shape them into small laddus.
