Nei Payasam

Nei payasam is a very simple, thick in consistency and delicious payasam. Nei payasam  is a  famous  offering in the temples of Kerala. It is made with rice, jaggery  and ghee. Try this recipe for this Vijayadasami.


½ cup raw Rice

1 cup jaggery

1/3 cup Ghee

1 tsp cardamom powder

8 cashew nut

1 table spoon raisins

Few  sugar candy


Wash and cook the raw rice with 1.5 cups of water in a pressure cooker for 2 whistles.

Meanwhile heat a heavy bottom vessel and add the jaggery and ¼ cup of water. When the jaggey dissolves completely strain the impurities and pour back into the same vessel. Let the jaggery syrup boil for few minutes.

Mash the rice and add to the jaggery syrup. Keep stirring for few minutes.

Now add the ghee and keep stirring till payasam starts leaving the sides of the vessel

Add the cardamom powder, roasted cashew, sugar candy and raisins and mix well.

Delicious  Nei  payasam is ready  to serve.
