Karamani Sundal is yet another famous sundal made during Navaratri. Karamani /cow peas Sundal is a very healthy, filling and protein packed dish. Make this for this Navaratri and enjoy.
1 cup black eyed peas
½ cup grated coconut
Salt as needed
1 tsp mustard seed
2 tsp urad dal
2 red chillis
1 sprig curry leaves
1 pinch of Asafoetida
Soak the black eyed peas for six hours or over night. Drain the water and pressure cook the black eyed peas with salt till it is soft for 2-3 whistles.
Heat the oil in a pan , and add mustard seeds. When the mustard seeds begin to splutter add urad dal, broken red chilli, curry leaves and asafoetida and fry for a while.
Now add the cooked black eyed peas and mix well. Finally add grated coconut and mix well
The yummy black eyed peas sundal is ready for neivedhyam or for serving.
