Today I would like to share the recipe of Sambar or Varutharacha Sambar. This Sambar is made with freshly ground spices and coconut hence its taste is unique. It is one of the must item in onam sadya menu. This South Indian recipe made with lentils and vegetables is also an accompaniment for idlis, Vadas and Dosas . Ingredients
½ cup Toor dal
2 cups of Vegetables cut into pieces
(I have taken one drumstick, a piece of pumpkin
10 small onions, and one tomato)
1tsp tamarind pulp
½ tsp turmeric powder
½ tsp hing
1tsp salt
For Roasting and Grinding
½ cup coconut
3 or 4 small onions
Few curry leaves
2 tbsp coriander seeds
½ tsp fenugreek seeds
4 or 5 red chillies
For tempering
1tsp Mustard seeds
½ tsp fenugreek seeds
2 broken red chillies
Few coriander leaves
3 tsp oil
Method
Pressure cook toor dal . Mash it well and keep aside.
Add one teaspoon of oil and roast the fenugreek seed, redchillies and coriander seeds till good aroma starts coming. Remove it from pan and add one teaspoon of oil. Roast the coconut, small onions and curry leaves till the coconut turns golden brown.
Grind it to a smooth paste and keep aside.
Cook the chopped vegetables along with required water, turmeric powder and salt. Cook till the veggies are done.
Now add dal and Tamarind paste. When it boils add the coconut paste and hing to it. Add water to adjust the thickness of the curry. When it boils thoroughly remove from flame.
Heat 1sp oil in a pan and add the mustard seeds, fenugreek seeds and the red chillies to it. When it crackles add it to the sambar. Garnish with coriander leaves and curry leaves and serve with rice or with idli or dosa.
