Beetroot Pachadi/ Beetroot yogurt curry

Pachadi  is an inevitable part of Kerala sadya or feast. Beet root pachadi is made with cooked beetroot, coconut and plain yogurt. The bright pink colour makes the sadhya look so colourful. If you haven’t tried this yet , follow this easy recipe for your Onam Sadya.

Ingredients

1 medium sized grated Beet root

1 ½ cup fresh yogurt

Salt to taste

To Grind

1/3 cup grated coconut

3 green Chilli

A small piece of ginger

½ tsp Mustard seeds

For tempering

½ tsp Mustard seeds

Few curry leaves

1tsp coconut oil

Method

Add ½ cup of water to the grated beetroot . Add salt and cook till the beetroot is soft.

Grind the coconut, green chillies , mustard seeds and ginger  to a smooth paste by adding little of the yogurt.

Add the ground coconut mixture to the cooked beetroot and cook for a minute. Remove from fire and add the whisked yogurt and mix well.

Heat a pan. Add 1tsp of coconut oil and temper with mustard seed. Remove from heat and add the curry leaves. Pour the tempering over the pachadi and mix well.

Serve with steamed Rice and Enjoy!!
