Vada Pav

Vada pav is a vegetarian fast food dish native to the state of Maharashtra. The dish consists of a deep fried potato dumpling placed inside a bun or pav accompanied with one or more chutneys. It is also called as the poor man’s Burger. This popular street food is loved by all. Vada pav originated as cheap street food in Mumbai, but now it is offered in restaurants throughout India.
Ingredients
For making Vada
4 medium sized boiled potato
2 green chilli finely chopped
1 inch grated ginger
2 clove garlic crushed
½ teaspoon mustard seeds
¼ teaspoon Turmeric powder
Pinch of hing
Few curry leaves
2 tbsp coriander leaves chopped
½ tsp salt
2 tbsp oil
Method
In a pan add 2 tbsp oil and splutter ½ tsp mustard seeds. Then add hing, Curry leaves, ginger, garlic, green chilli and coriander leaves. Saute well. Next add turmeric powder and sauté well. Further add mashed potato and salt. Mix well and turn off the flame.
For Batter
1 cup gram flour
2 tbsp rice flour
Pinch of hing
¼ tsp turmeric powder
¼ tsp chilli powder
¼ tsp salt
¼ tsp baking powder
¾ cup water
Other ingredients
Oil for frying
6 pav buns
6 green chilli
3 tsp green chutney
3 tsp garlic chutney
Method
In a bowl add gram flour, rice flour, turmeric powder, chilli powder, hing, baking powder and salt. Add water as required to prepare smooth batter.
Make small balls with potato mixture. Dip it in the batter and deep fry in hot oil stirring occasionally on medium flame till the vada turns crisp and golden.
Now fry the green chilli stirring occasionally by turning off the flame. Drain the fried chilli on a kitchen paper.
Add 2 tsp of water to the leftover batter .pour the batter in to hot oil and prepare chura. Fry on medium flame till the chura turns golden and crisp. Drain the chura on a kitchen paper.
Garlic Chutney
Heat 2teaspoon of oil in a pan . add 6-8 garlic cloves and fry for 1-2 minutes or until it turns slightly brown. Set aside on a kitchen towel. Add 6 red chillies and roast it until crisp. Add ½ cup coconut and roast it until light golden brown. Transfer the garlic, red chillies, salt and coconut to a blender and grind to a coarse chutney
Green chutney
Add 1 ½ cup coriander leaves, 2 green chilli, 2 garlic cloves, ½ tsp cumin powder, ½ tsp salt, and 1tsp lime juice to the blender. Add 1 tsp of water or as required. Blend it to a smooth paste.
Assembling Vada Pav
Slit the pav halfway without cutting fully . Spread ½ tsp green chutney on both the inner sides of the pav and sprinkle ½ tsp garlic chutney on one side of the slit pav. Place the prepared Vada in the center of the pav. Also stuff few chura and fried chili. Finally press the vada and serve immediately.
