Olan – An important dish for onam sadhya and also one of the most simplest recipe. It is made using white pumpkin, black eyed beans, green chilli and coconut milk. You can serve this with steamed rice.
250 gram White pumpkin cut into chunks
¼ cup Black eyed Beans
2 or 3 green chillies
250 ml coconut milk
2 sprigs curry leaves
2 teaspoons coconut oil
Salt to taste
Soak the black eyed beans in water for 2 to 3 hours and cook until soft.
Cook the white pumpkin along with little water,slit green chillies and salt.
Once it is cooked, add the thick coconut milk and the cooked blacked eyed beans.
Cook over low flame for 5 minutes and switch off the heat.(do not boil too much after adding the coconut milk)
Add curry leaves and drizzle raw coconut oil on the top.
Yummy Olan is ready to serve.
