Tricolour Idli or Tiranga Idli is a variation to the simple traditional idli. Celebrate this Indian Independence day with these easy and delicious recipe that are naturally tri-coloured. To make three colour layers I have used spinach to give green colour and carrots to make saffron colour. Enjoy the idli with chutney or sambhar.
2 cups idli batter
1tbsp Spinach puree
1 tbsp carrot puree
Oil for greasing
Boil water in a pan and add spinach to it. Boil it for 5 minutes. Drain the excess water and wash it with cool water. Now grind it in a mixer into a smooth paste.
Wash the carrots and slice them into small pieces. Now boil it for 10 minutes. Sieve the excess water and wash it with cool water. Grind it into a smooth paste
Divide the idli batter equally in three different bowls.
Mix carrot puree in one bowl of batter for the orange colour
Add spinach puree to another for the green colour.
Leave third section of batter as it is for white colour.
Grease a small bowl or a katori with oil. Fill 3 tsp of green colour batter and Steam it for 5 minutes.
Take out and again fill 3 tsp of white batter on the top of green. Again steam it for 5 minutes.
Again take out the bowl and fill 3 tsp of orange idli batter and steam for 5 minutes.
Take out the bowl and leave it to cool for 5 minutes.
Take out the idli from the bowl with the knife or spoon
Your Tiranga Idlis are ready to serve with coconut chutney or sambhar
