Kanda Poha is a popular Maharashtrian breakfast recipe made from red or white poha or beaten rice. Poha is the Maharashtrian word for flattened or beaten Rice and Kanda means Onions. It is made with beaten rice and tossing in onions, green chillies and peanuts tastes awesome. This recipe will help you to make perfect Poha with in minutes.
Ingredients
1 ½ cup thick poha/beaten rice
2 tbsp peanuts
1 tsp mustard seed
1 tsp cumin seed
1 onion finely chopped
2 green chilli finely chopped
1 tsp sugar
1 tsp salt
A pinch of asafoetida
2 tbsp oil
¼ tsp turmeric powder
2 tbsp finely chopped coriander leaves
2 tsp lemon juice
Few curry leaves
Method
Take a strainer and add poha into it. Wash the poha twice. Add 1tsp of sugar and 1tsp of salt to soaked poha and mix gently.
In a kadai heat 2 tbsp of oil and roast 2tbsp peanuts until the peanuts turn crunchy. Keep aside
In the same oil add 1sp mustard, 1tsp cumin, pinch of asafoetida and few curry leaves.
When the mustard splutters add chopped onion and green chillies and sauté well
When the onions turns pinkish add turmeric powder and sauté well
Add soaked poha and mix gently. Cover and cook for 5 minutes
Now add lemon juice, chopped corander leaves and the roasted peanuts and mix gently.
Serve kanda poha hot garnished with sev or grated coconut with tea
