This Quinoa salad is refreshing, crisp and delicious. This salad packs great for lunch, dinner or for picnic. Quinoa is nutritionally beneficial and it’s easy to prepare. Please let me know how it turns out for you.
½ cup quinoa
1 tsp cooking oil
¼ tsp turmeric powder
½ tsp pepper powder
1 medium chopped onion
1 carrot chopped
1 chopped tomato
½ cup curd
1tsp green chutney
A pinch of salt
Cook the quinoa same like rice by adding double the quantity of water for 15 minutes on medium heat. Cook until the quinoa has absorbed all of the water or until it becomes transparent. Add half teaspoon pepper, 1/4teaspoon turmeric powder and a teaspoon of oil while cooking the quinoa.
Chop finely one onion, one carrot and one tomato.
Prepare green chutney using fresh mint leaves, coriander leaves, green chillies, lemon juice, ginger and garlic.
For dressing add curd to a bowl. Add green chutney and a pinch of salt and mix well.
In a large serving bowl combine onion, tomato, carrot and cooked quinoa and drizzle the dressing on the top. Toss until the mixture is thoroughly combined. Season with black pepper and an extra pinch of salt if necessary.
Serve chilled or at room temperature.
