Maharastra is the next place that we are going to visit in our culinary tour. Puran poli is one of the most popular sweet item in Maharastra. Puran poli is specifically made during ganesh chaturthi and other festive occasions like diwali, adding up to the spirit of celebration. It is a flat bread stuffed with a sweet lentil filling made from chana dal and jaggery. This can be served as a dessert.
Ingredients
For mixture
1 cup chana dal
3 cups water
1 cup jaggery
1 tsp cardamom powder
For making dough
2 cups maida
1tsp salt
2 tsp ghee
1 cup water
Ghee/oil for roasting
Method
Take chana dal in a pressure cooker and add 3 cups of water. Pressure cook it for 3-4 whistles.
Drain the water and mash it. Add jaggery and cardamom powder and mix well . Cook on a low flame. Continue cooking until it gets dry.
Take maida in a bowl. Add ghee and salt . Mix well. Add water and make soft dough. Cover the bowl with a damp cloth and leave it for 30 minutes
Make balls out of the dough and roll it in round shape
Fill the stuffing in it and cover the edges and roll out again in round shape. The amount of filling should be equal to the amount of dough.
Heat a tawa and cook the puran poli on both sides with lots of ghee. If rolled properly it will puff up.
Once cooked remove it to the plate , Apply some more ghee on the top and serve hot immediately.
