As it is mango season enjoy this fruit in its many forms. Today’s recipe is a yummy mango pickle from Gujarat – Raw Mango chunda or Aam ka chunda . Aam chunda is a spicy, sour and sweet mango pickle made with unripe mangoes and spices. The traditional preparation of chunda is time consuming. It is made by keeping the mango mixture in a glass jar under sunlight for 7days or until the sugar and jaggery melts and reaches a string consistency. This is a quick version of Aam ka chunda recipe on gas stove. You can serve this as a side condiment with any meal or with paratha, thepla, pooris or rotis. You can also spread it on a toast and have it like a marmalade. Hope you will try this recipe.
Ingredients
2 raw mango grated
¼ tsp turmeric powder
1 cup sugar
½ cup jaggery
1 tsp chilli powder
1 tsp roasted cumin seed
1 tsp salt
Method
Combine the grated mango, sugar, jaggery, salt and turmeric powder in a pan.
Cook on a low flame stirring occasionally or till it comes to one string consistency.
Switch off the flame and transfer it into a bowl. Add the chilli powder and cumin seed and mix well. Allow it to cool completely.
Once cooled store it in an air tight glass container. This can be stored up to an year at room temperature.
