In our food journey next we travel to Madhya Pradesh, a state that holds the central position in India. Kachori is a famous street food all over north India but in Madhya Pradesh there is something special that kachoris are known as Khasta Kachori. Khasta means flaky. When you eat it the crunchy sound occurs is the proof that you are eating the famous kachori of Madhya Pradesh. The flaky kachoris are filled with moong dal and Indian spices and deep fried then topped with curd, green or red chutney. It is a well known breakfast of the places like Indore and Bhopal.
Ingredients
For Stuffing
¼ cup moong dal
1tsp chilli powder
½ tsp coriander powder
¼ tsp turmeric powder
1 tsp fennel seeds , crushed
½ tsp cumin powder
½ tsp garam masala pwder
½ tsp Amchur powder
1 tsp sugar
A pinch of hing
Salt to taste
4-5 tsp water
For dough
1 cup all purpose flour/maida
1 tsp semolina
2 tbsp oil
Salt to taste
Water as required
Oil for frying
Method
Dry roast moong dal and coarsely powder it. Transfer it to a bowl.
Add chilli powder, turmeric powder, coriander powder, cumin powder, crushed fennel seed, garam masala powder, dry mango powder, hing, sugar and salt to the moong dal powder and mix well.Then add water and mix well
In a bowl add maida, semolina, oil and salt. crumble the flour well with oil. Add water little by little and knead to form a dough and cover them for 15 minutes.
Take a lemon sized ball and flatten it. place 1tsp of moong dal stuffing put it in the centre and get the edges together to form a bundle. Close the top by pressing and flattening. Gently press the edges and flatten to form small rounds,
Heat oil in a pan. when the oil is just hot enough add the kachori. When the kachori start puffing up then gently press the kachori with a spoon so that they puff up well. When the base becomes light brown gently turn them over. Fry the kachoris till they become golden and nicely crisp from outside. Remove the kachori and place it on kitchen paper towel to remove the excess oil.
Serve Khasta Kachori with green or red chutney and enjoy!!
