Quinoa Vegetable Pulao

Today I am sharing a very delicious, healthy and a perfect meal recipe – Quinoa Vegetable Pulao .Quinoa is gluten-free,  low in glycemic index, high in protein and one of the few plant food that contain sufficient amount of amino acids. Quinoa is a grain like seed originally from South America.  It originated with the Incas in the mountains of Bolivia, Chile and Peru. It was a sacred crop to the Incas who called it the mother of all grains. It cooks in the same way as rice and can be substituted instead of rice. Try this quinoa pulao recipe and enjoy the health benefits and wonderful taste of quinoa!

For quinoa

1cup quinoa

2 cup water

½ tsp salt

1 tablespoon oil/ghee

Pinch of turmeric

Other Ingredients

½ cup green peas

½ cup carrot cut into small pieces

½ cup chopped capsicum

1 tbp chopped ginger

1 tsp chopped garlic

2 green chillies finely chopped

1 chopped tomato for garnishing

1 tbsp lime juice

1 bay leaf

1 piece cinnamon

3 cloves

3 cardamon

½ teaspoon cumin seed

½ tsp salt

2 tablespoon oil/ghee

Method

Wash quinoa several times.

In a pan combine quinoa, water, oil, salt and turmeric. Bring to boil.

Cover and cook in a low flame until quinoa is tender and water is absorbed.

Heat oil in a pan and add the cumin seeds, ginger, garlic, green chillies and the spices. Sauté for a minute.  

Then add carrot, green peas, capsicum, and salt. Let the vegetables cook over medium flame until vegetables are tender and firm.

Add cooked quinoa and the lime juice to the cooked vegetables and mix gently.

 Garnish with tomatoes and serve it with plain yogurt or raita.
