Bread upma is a simple and easy recipe for your busy schedule which can be served as a breakfast. It is a great way to use up leftover bread. Literally you need 15-20 minutes to make this dish. I recommend to toast the bread first. Otherwise the bread slices may turn soggy. You can also add veggies like green peas, beans or carrots.
Ingredients
6 slices bread
1 onion finely chopped
2 medium size tomato finely chopped
2 green chillies chopped
1 tsp ginger chopped or grated
½ tsp mustard seeds
½ tsp turmeric powder
1 tsp chilli powder
3 tbsp chopped coriander leaves
2 tbsp oil
Salt to taste
3tbsp water
1tbsp lemon juice
Method
In a toaster or in a pan toast the bread to golden brown and crisp and Cut the bread slices into cubes.
Heat oil in a kadai then add mustard seeds. When the mustard seeds splutters add onion, ginger and green chillies. Sauté till onions turn translucent.
Now add chopped tomatoes and sauté well till the tomatoes turn soft and mushy.
Add turmeric powder, chilli powder and salt and sauté for a minute. Add 3tbsp of water. Cover and cook for 2 minutes
Add toasted bread pieces and one tablespoon lemon juice and mix gently with out breaking the bread pieces
Cover and cook in a low flame for 2 minutes so that the bread absorbs masala.
Serve garnished with coriander leaves.
