Egg Bhurji Buns

Egg Bhurji is a dish originated from the Indian SubContinent. Egg  Bhurji  Buns is a versatile dish. It can be served as breakfast or Dinner. The tangy tomato ketchup enhances the flavour. Today I got  few packs  of fresh  buns from  my  friends  bakery.  A  product of “Simple Bake Factory”. The buns were soft and fresh so I decided to make Egg  Bhurji  Buns for our Breakfast. Try this recipe and relish it with your loved ones.


3 eggs

One large onion chopped

2 medium tomatoes chopped

2-3 green chillies chopped

1 tbsp oil

1 tbsp butter

1 tablespoon chopped coriander leaves

Salt to taste

1 tsp chilli powder

½ tsp turmeric powder

Butter to toast the buns

2 cheese slices

Tomato ketchup as needed


Break the eggs in the bowl, whisk them nicely and  keep  aside.

Heat oil in a pan and add chopped onions and green chillies. Sauté for 2-3 minutes.

When it becomes soft add tomatoes and cook for 3 minutes on medium heat till tomatoes are soft and mushy,

Add chilli powder, turmeric powder and salt. mix well.

Pour egg mixture and cook the eggs . keep stirring in between so that they do not stick to pan. Add  one tablespoon of  butter and cook till it is done

Cut bun from the middle and toast both the sides by adding butter

Spread a liitle of tomato ketchup on one part of the bun and fill it  with Egg bhurji  and top it with halved cheese slice. Decorate it with an olive.
