Seventh state coming under signature dishes of Indian states is Gujarat. Who does not like something that is sweet , spicy and tangy? If you are looking something like that Kutchi Dabeli is a perfect answer. Kutchi Dabeli is a popular snack of India, originated from the region of Kutch in Gujarat. Dabeli has its orgin in Mandavi , a city in kutch region. It is said to be invented by a resident called Keshavji Gabha Chudasama in 1960. His shop is still there in Mandavi. And nowever days it is popular all over the india. It a spicy snack made by mixing boiled potatoes with a special Dabeli Masala. Then putting in a pav or burger bun and serving with tamarind and garlic chilli chutney. Also garnished with onions, peanuts and pomegranate . I have used burger buns instead of laadipav as it is easily available.
For Dabeli masala
2 dry red chillies
2 tbsp coriander seeds
1 inch cinnamon stick
6 cloves
1 teaspoon cumin seed
1 bay leaf
1 teaspoon fennel seed
Few black pepper corns
Dry roast the above ingredients and grind it into a fine powder
Red Chutney
12 red chillies
12 garlic flakes
Salt to taste
Water as needed
Soak the chillies for 2 hours. Grind together all ingredients with little water in medium consistency .
Tamarind chutney
Lemon sized ball of tamarind
10 seedless dates
½ tsp chilli powder
A piece of jaggery
Salt to taste
Water as needed
Boil together tamarind, dates, chilli powder , jaggery and salt with little water. Cool it a bit and blend in a blender to make a smooth chutney.
Ingredients For Dabeli Filling
1 cup boiled potato
2 tbsp Dabeli Masala
2 tbsp Tamarind chutney
½ tspn Red chutney
4 tbsp Masala peanuts
4 tbsp Chopped onions
2 tbsp Pomegranate pearls
2 tbsp Chopped coriander leaves
Salt to taste
¼ cup water
Preparation of Dabeli Filling
Heat oil in a pan. Add Dabeli masala, Date and tamarind chutney, red chutney , mashed potatoes and salt.
Mix well and add water and cook for 5 minutes.
Switch off the flame and spread the filling evenly in a square tray.
Now add layers of masala peanuts, Chopped onions, pomegranate pearls and chopped coriander leaves.
Allow to cool for 15minutes and divide into six portions
For Dabeli
6pav buns/ burger buns
6 tspn butter
6 tspn red chutney
6 tspn Tamarind Chutney
6 tspn chopped onions
6 tspn Sev
6 portion of dabeli filling
How to set Dabeli
Slit the pav horizontally.
Spread red chutney on one side and tamarind chutney on the other side
Place one part of dabeli filling in the centre. Top with chopped onions. Pomegranate seeds and sev.
Close it with top slice . Dip the sides of dabeli with sev.
Heat a pan and add butter . Roast dabeli from both sides.
Garnish it with masala peanuts, chopped onion, chopped coriander leaves and pomegranate pearls
Serve hot.
