Rava Kesari is a popular sweet dish from south Indian cuisine made of semolina, ghee, Sugar, saffron and nuts. It is similar to the north Indian Suji halwa and in Maharastra this is called as Sheera. It will take only 15 minutes to make this dessert
Ingredients
1 cup semolina or rava
1 cup sugar
1 cup ghee
2i/2 cup water or milk
2pinches of saffron or orange food colour
10 cashew nuts
10 raisins
i/4 tsp cardamom powder
2 table spoon warm milk
Method
Soak 2 pinches of saffron in 2 tbsp of warm milk
Heat 2 tablespoon of ghee in a heavy bottom pan
Fry cashews until slightly brown
Then add raisins and fry until golden, remove them to a plate
Add the remaining ghee and add rava to it
Roast the rava well on a medium flame until slightly aromatic. Do not over roast it
Bring the water to boil. Add the boiling water to rava and stir continuously till the rava absorbs water and no lumps are formed
Add sugar and saffron and stir continuously
Cover and cook for 2 minutes in a low flame
Add roasted cashews,raisins and cardamom powder. Mix well till rava kesari separates from pan
Serve the kesari warm.
