Kumbilappam is an authentic dish from Kerala. The jackfruit preserve is incorporated with rice flour, grated coconut along with spices to prepare the dough. The flavour of Jackfruit and Cinnamon fragrance of the Bay leaves blend together to give a unique taste.
Ingredients
3/4 cup Jackfruit jam/Chakka varatti
1/2 cup grated Coconut
1 cup Rice flour
1/2 tsp Cumin powder
1/4 tsp dry Ginger powder
1/.2 tsp Cardamom powder
1/4 cup Water
8-9 Bay leaves
Method
Clean the bay leaves under running water and wipe it
Make a cone with bay leaves and pin it with a toothpick
Make a dough with rice flour, chakka varatti, coconut, cumin powder, ginger powder and cardamom powder by adding necessary water. The dough shouldn’t be very loose nor very tight. You can add extra jaggery if you need more sweetness
Fill the prepared cones with the dough and cover the top with left out corner of the leaf
Place it in a steamer filled with water and steam for 15 minutes
Check with a tooth pick by pricking in the center of appam. it should come out clean
Remove on a plate and serve warm
