This South Indian Coconut Rice is a mildly spiced rice dish cooked with fresh coconut. The aroma of curry leaves and fresh coconut gives the rice a magical flavour. You can serve coconut rice with a veg.curry or even with fresh curd and papad.
Ingredients
2 cups cooked rice
1 cup grated coconut
2 red chilies broken
2 tbsp ghee/coconut oil
1/2 tsp mustard seeds
1/2 tsp cumin
1 tspĀ chana dal
1tsp urad dal
1tbsp chopped ginger
Few curry leaves
Cashew nut as needed
Salt to taste
Method
Add ghee or oil to a pan. Add mustard, cumin, chana dal and urad dal.
Fry until the dals turns golden.
Now add ginger, red chillies and curry leaves and fry until the leaves turn crispy.
Add coconut and fry for 2 minutes
Add cooked rice and salt and mix everything well
Switch off the stove and serve coconut rice with yogurt, pickleĀ and papad
