Carrot Rice

Carrot Rice is a mildly spiced rice dish .This is one of the rice recipes that can be made  quickly.  If you have cooked rice or leftover rice it take only little time to prepare and kids love to carry it in the lunch box. Carrot rice can be served alone or with some curd. raita or papads.

Ingredients

1 cup Rice (uncooked)

1 Teaspoon Mustard seed

1/2 Teaspoon Cumin

2 Teaspoon Urad  Dal

1 Medium size Onion chopped

1 Teaspoon Grated Ginger

2 Carrot grated or 1 cup

1 Tablespoon oil

2 Chopped Green chillies

Few Curry Leaves

Fried Cashewnuts as needed

Salt as needed

Method

Wash the rice and cook for about 20 minutes until tender

Heat a pan and add oil to it. Then add mustard seeds. when it splutter add urad dal and fry for a minute.

Now add chopped green chillies, curry leaves,grated ginger and chopped onion and saute until transparent

Add grated carrots and saute for one or two minutes. Sprinkle salt and mix well

Add cooked and cooled rice and the fried cashewnuts

Mix everything well and serve with a raita
