Brinjal fry is a simple and easy dish. Brinjal fry can be a side dish for rice or roti
Ingredients
2 medium sized Brinjal
1 teaspoon Kashmiri chilli powder
1/2 teaspoon Turmeric powder
1 teaspoon Sambar powder
Salt to taste
4 or 5 tablespoons rava
Oil as required
Method
Wash the brinjal and cut into small round pieces
Soak the brinjal slices in water for 10 minutes
Drain the water and take brinjal slices in a large plate
In a mixing bowl add turmeric powder, Kashmiri chilli powder, Sambar powder and salt now add 2 tbsp water and prepare a masala paste
Add the Brinjal slices to it . coat the masala evenly all over the brinjal slices
Take rava on a plate and place each slice on it. coat the slices with rava
Heat one or two tablespoon of oil in a tawa. place the brinjal slices on tawa and fry on medium flame
Let one side become crisp and golden and then turn over and fry the second side till it becomes crisp
Remove the fried brinjal slices and place them on kitchen towel
It can also be fried without coating in Rava
Serve it with rice or roti
